INGREDIENTS   

• 3 lemons, remove the insides and juice 2 of them   

• 250ml heavy cream   

• 80g sugar   

• ¼ tsp salt   

• 1 vanilla bean, scraped   

• 2-3 cardamom pods, cracked   

• Blueberry jam   

• Mint leaves, for garnish    

 

INSTRUCTIONS:

1. Slice the lemons in half and remove the insides. 

2. Slit open a vanilla bean an scrape out the seeds. 

3. Juice 1 lemon into a bowl and zest 1 lemon into it. 

4. In a pan add heavy cream, vanilla pod and seeds, sugar and salt. 

5. Heat it up while stirring. When the sugar is melted add the lemon juice. Keep stirring. 

6. Then strain the cream mixture into a bowl and spoon it into the lemon peels. 

7. Refrigerate for 3-4 hours until the liquid has set. 

8. Garnish with blueberry jam and mint leaves.
