Busy week? One pan dinners to the rescue! Less mess, more time for what matters.
Ingredients
- 2 medium sweet potatoes, diced
- 400 g brussels sprouts, halved
- 1 large red onion, cut into wedges
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 sausages, sliced
Garnish:
- 30 g feta cheese
- 1 tbsp chopped parsley
Maple Tahini Sauce:
- 3 tbsp tahini
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1–2 tbsp warm water
- Salt + pepper to taste
Instructions:
- Chop up all the veggies into similar sizes and put on a sheet pan.
- Season with, salt, pepper, paprika and olive oil.
- Toss everything and bake in the oven first for 15 minutes at 200C.
- Slice the sausages and add them ti the sheet pan then bake for 20 more minutes.
- To make the sauce mix together tahini, warm water, honey, apple cider vinegar, salt and pepper.
- Remove the sheet pan from the oven and dress it with the sauce and top with feta and parsley.
