Sausage & Veggie Tray Bake

Busy week? One pan dinners to the rescue! Less mess, more time for what matters. 

Ingredients

  • 2 medium sweet potatoes, diced
  • 400 g brussels sprouts, halved
  • 1 large red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 sausages, sliced

Garnish:

  • 30 g feta cheese
  • 1 tbsp chopped parsley

Maple Tahini Sauce:

  • 3 tbsp tahini
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1–2 tbsp warm water
  • Salt + pepper to taste

Instructions: 

  1. Chop up all the veggies into similar sizes and put on a sheet pan.
  2. Season with, salt, pepper, paprika and olive oil.
  3. Toss everything and bake in the oven first for 15 minutes at 200C.
  4. Slice the sausages and add them ti the sheet pan then bake for 20 more minutes.
  5. To make the sauce mix together tahini, warm water, honey, apple cider vinegar, salt and pepper.
  6. Remove the sheet pan from the oven and dress it with the sauce and top with feta and parsley.
