Rice Paper Pancakes
These rice paper pancakes make the perfect snack—crispy, savoury, and packed with wholesome ingredients. Light yet satisfying, they offer a delightful crunch and are a guilt-free way to enjoy a flavourful treat.
PRODUCTS USED:
INGREDIENTS
- 2 spring onions chopped
- 1/2 red cabbage
- 2 carrots
- 50 g shredded mozzarella cheese
- 6 rice paper sheets
- Soy sauce for serving
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 onion
INSTRUCTIONS
- Grate the cabbage, the carrots, and the cheese
- Thinly slice onions and spring onions
- Mix everything in a bowl along with the spices
- In a pan heat up a bit of oil and the first rice paper.
- Then cover the rice paper with a generous layer of the veggie mixture
- Place the other rice paper on top and make sure to close the pancake by sticking the two layers of rice paper together
- When both sides are golden brown take the pancake off the pan and slice in to small pieces.
- Dip in soy sauce and enjoy!
