Rice Paper Pancakes

These rice paper pancakes make the perfect snack—crispy, savoury, and packed with wholesome ingredients. Light yet satisfying, they offer a delightful crunch and are a guilt-free way to enjoy a flavourful treat.

INGREDIENTS

  • 2 spring onions chopped
  • 1/2 red cabbage
  • 2 carrots
  • 50 g shredded mozzarella cheese
  • 6 rice paper sheets
  • Soy sauce for serving
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 onion


INSTRUCTIONS

  1. Grate the cabbage, the carrots, and the cheese
  2. Thinly slice onions and spring onions
  3. Mix everything in a bowl along with the spices
  4. In a pan heat up a bit of oil and the first rice paper.
  5. Then cover the rice paper with a generous layer of the veggie mixture
  6. Place the other rice paper on top and make sure to close the pancake by sticking the two layers of rice paper together
  7. When both sides are golden brown take the pancake off the pan and slice in to small pieces.
  8. Dip in soy sauce and enjoy!
